Vegetable Pulav

Cooking a delicious meal is half the battle. Getting your family to eat said delicious meal is the rest. Pulav, fortunately, eliminates both parts of the battle in my household.

Vegetable Pulav is made by gently toasting fragrant Basmati rice with spices, cooking it with vegetables and then garnishing it with caramelized onions and cashew nuts. Served with plain yogurt or Raita, Recipe Sack’s Vegetable Pulav will soon become your household’s favorite go-to meals too.

This kit yields 2 (by itself)/4 (as side dish) servings.

Included in this meal kit: Basmati Rice, Cashew nuts, Masala Mix (Bay Leaves, Dry mango powder, Cloves, Cinnamon, Chili powder, Turmeric, Cumin powder, Coriander powder, crushed black pepper powder, cardamom powder, and star anise powder).

You will need (not included in this bag)…

  • 2 cups water for cooking
  • 2 tbsp. cooking oil
  • ½ inch ginger grated
  • One tomato diced
  • ½ cup Frozen peas
  • Chopped cilantro (for garnish)
  • ¼ lbs. of cut string beans
  • 1 medium size carrot, peeled and cut the same size as the string beans
  • One onion cut fine, length-wise
  • One small potato, peeled and cubed
  • Salt, to taste

    I was given this as a stocking stuffer at Christmas, and just now got around to making it. Wow! I think I personally would add a few more cashews, but honestly, it’s one of the best meals I’ve had in a long time, plus it makes an amazing amount of leftovers.

    The basic combination was very tasty, but we would have liked it a little less “bland”. Maybe could add a little extra packet of spices for those of us that prefer a slightly stronger flavor. I served it with a raita.

    I was given this as a gift (from G3, I think) and I made it tonight for my husband and myself. Hot, hearty, healthy and delicious! I would have said ‘heavenly’ instead of delicious, but I didn’t want the alliteration to get weird. 😉 Oh, and only one pot to boot!

    This is better than the Pulav I make from scratch and I am Indian. If you sub the fresh veggies with frozen this dish becomes even faster to make. Tasty and healthy and really quick to put together.

    Made it tonight and we loved it! Normally our dinners have meat, but we didn’t miss it with this meal. I served it with a raita and it was very satisfying and filling. It was also quite easy to make. Definitely a winner!

    We loved the Vegetable Pulav as it was a super one pot dish and cannot wait to take it camping with us due to the ease of preparation. I had my neighbour around for dinner and he loved it too – we had it with side of cauliflower prepared in an amazing Indian style. The ease of prep is always appreciated in my kitchen – thank you!
